My favorite in Fallout 3 is the at the SatCom Array when you place 10- 20 mines near the wooden plank and shoot them the blast will cause a giant teddy bear to be pulled through and in Fallout New Vegas my favorite Easter Egg is when you have 80 science and tell the robot 1C 3C R34 M which means ICE CREAM.

Can't think of any of the top of my head. Only one I could think of is Seymour, Fry's dog from Futurama in NV.

The Mad Max ester egg in FO3
There is a random encounter with a predator named Mel whit a leather jacket and a sawed off shotgun whit high Perception (? don't remember) grants the information that the shotgun is unloaded

My favorite from fo3 is the room you get into, that got bloody hand-prints climbing the wall, and the roof. And you can see that the climbing has been done halfway thanks to those "toilet cleaner" things. (i don't know what they are called).
My favorite from fonv is the Indiana Jones one where you find a corpse with his hat inside a refrigerator.
